Basic Chilli Sauce

INGREDIENTS 

 250g chilli’s, roughly chopped 

  200g diced tomatoes 

 150g white sugar 

 150ml white wine vinegar 

 

METHOD 

 Step 1 Combine chilli, tomatoes, sugar and vinegar in a saucepan over high heat. Bring to the boil. Reduce heat to medium. Simmer, stirring occasionally, for 7 minutes or until sauce thickens slightly. Remove from heat. Stand for 5 minutes. 

 Step 2 

 Process mixture, in batches, until smooth. Pour into hot sterilized jars. Secure lids. Refrigerate for up to 3 weeks. 

   Adjust as you see fit, add other ingredients such as vegetables, carrots onion ect. the more you add just increase the acid to keep the ph levels below 4.6 this is reached by uping the  vinegar, brown sugars have a lower ph so you can swap that. add lemon juice/ lime juice the choice is yours.
